Cableway Chef Stars in New Video Making Milk Tart the Table Mountain Way

Table Mountain Cableway is celebrating National Milk Tart Day, by releasing a YouTube video featuring the Cableway’s pastry chef, Octavia Nkomombini, sharing the recipe for her much loved interpretation of this South African classic in all its shortbread-crusted, custard-filled deliciousness.

“Our Cableway milk tart is a simple but delicious treat. I have been a baker for 10 years and this recipe is one that I have developed along the way. It is original, and made with a whole lot of love,” says Octavia, who stars in the video below:

  • 250g margarine
  • 175g white granulated sugar
  • 390g cake flour
  • 1 egg


  • 1.5l full cream milk
  • 6 eggs
  • 90g cake flour
  • 300g granulated sugar
  • 10ml vanilla essence
  • 50g margarine


Pastry ~

  1. Put oven on 170°
  2. Cream margarine and sugar then beat in 1 egg
  3. Add flour and, using wooden spoon, mix slow until well combined
  4. Make a ball and refrigerate for 30 minutes
  5. Grease a 30cm round pan then press the dough throughout
  6. Bake for 15-20 minutes
  7. Put it aside to cool

Filling ~

  1. Mix eggs and vanilla essence
  2. Mix in flour and sugar
  3. Place milk and margarine in a sauce pan – heat up and let simmer for 4 minutes
  4. Add milk and margarine to mixture, continuously stirring whilst pouring to prevent lumps
  5. Pour the filling into a pout bring to a boil to thicken
  6. Once thickened, pour filling over the pastry and sprinkle with ground cinnamon
  7. Place in the refrigerator and let it set for 3 hours

Milk tart at the mountain

Bringing the milk tart to the mountain top is an action-packed affair, with Octavia leading the way in the Lower Station production kitchen.

“When the first visitors arrive around 8.30am the Table Mountain Café and WiFi Lounge need to be ready to serve them,” says Octavia. “Starting at 6.30am our milk tart is freshly baked, with six to 12 tarts being sent up in the cable car daily.”

The Cableway’s milk tart, as well as a range of other confectionary items are available from the Table Mountain Café daily. On Fridays, South African pensioners who purchase a Seniors Special ticket (R100 return) can enjoy a slice of milk tart as part of the café’s Pensioner Meal.
